Beginning March 17, 2026, the modern Western restaurant Viridis invites guests to discover an all-new dinner experience. The space has been thoughtfully reimagined into two distinct zones, each offering its own unique allure—presenting two contrasting yet complementary culinary journeys. Whether marking a

 special evening or elevating an everyday moment, Viridis embraces each guest's occasion and mood, offering a more liberated, enriching dining experience imbued with understated luxury.

Signature Course Area

An intimate fine-dining sanctuary, where refinement and grace quietly shape an exceptional evening. Dinner in this area is offered exclusively as a single Signature Course, allowing guests to experience the chef's vision in its purest and most complete form—expressed seamlessly from the first course to the last.

 

Table Area

A space of casual elegance designed to be enjoyed as an extension of everyday life. This open and welcoming area invites families and friends to savor hotel-quality cuisine in an unpretentious, comfortable setting.

Guests may choose from ingredient-driven à la carte selections, conversation‑inspiring sharing dishes, or a refined yet approachable 9,000 yen short course, seamlessly balancing sophistication with ease. Here, the hallmarks of a luxury hotel—culinary excellence, thoughtful craftsmanship, and genuine comfort—coexist in perfect harmony, accommodating a wide range of dining styles and occasions.

Indulge in a weekend escape to sun‑drenched Italy, brought to life through an elegant culinary journey. Feast of Italy, our exclusive weekend brunch, celebrates the timeless flavors crafted by our master chefs and the refined ambiance that only The Ritz‑Carlton can offer.

Your experience begins with vibrant antipasti such as Caprese, featuring fresh mozzarella and ripe tomatoes, followed by signature dishes including the richly flavorful Milanese Ossobuco, the delicately prepared golden Milan‑style risotto, and Calzone, freshly fried to a fragrant, golden crisp in a piping‑hot oven, to create an irresistible aroma. Once renowned for their artistry at the legendary L’Osier in Ginza, Chef Kenji Yamanaka, Executive Chef of Viridis, and Chef Ryo Horiuchi, Executive Chef of Le Jardin, reunite after many years—two masters who know each other's craft intimately. Together, they will create an extraordinary culinary experience for one

 night only.

Chef Horiuchi, celebrated by gourmands both in Japan and abroad, claimed victory at the 2022 Taittinger International Culinary Competition as Japan's representative, earning the title of world champion—an honor bestowed upon only a select few Japanese chefs in the competition's 54-year history. Most recently, he achieved another remarkable milestone by winning the Bocuse d'Or Japan, securing his place as Japan's representative for the world finals of this "Olympics of gastronomy."

This exclusive evening brings together the innovation, precision, and profound respect for seasonality that define these two culinary virtuosos. Enhancing the experience is a special collaboration with Champagne Taittinger, one of the most distinguished maisons in the world of champagne.
