On this distinguished evening, we are privileged to welcome Mr. Frédéric Mairesse, Managing Director of Champagne Barons de Rothschild. Guests will be invited to experience firsthand the philosophy, terroir, and artistry embodied within each expression of this prestigious house.

From the specially crafted Ritz Reserve Brut to Blanc de Blancs, Rosé, and rare prestige cuvées, a curated selection of exceptional champagnes will be thoughtfully paired with a refined culinary journey. A gastronomic कथा that captures the climate and culture of Kyushu through seven distinct expressions.

The journey begins with an amuse featuring Yame tea, followed by delicate oysters, seasonal mushrooms, and a fish course marinated in sake lees. Each ingredient is meticulously sourced from across Kyushu, reflecting both the dedication of its producers and the assurance of quality, thoughtfully expressed in every dish.

The bounty of the land is further elevated through time-honored fermentation techniques, deepening flavors and adding remarkable complexity. Highlights include the refined richness of Kagoshima’s prized Nozaki Wagyu, the lingering maritime elegance of Miyazaki caviar, and a graceful finale accented by vanilla from Nagasaki and tonka bean.

Together, these elements compose a quiet dialogue between Kyushu’s land, its people, and the changing seasons.

Beginning March 17, 2026, the modern Western restaurant Viridis invites guests to discover an all-new dinner experience. The space has been thoughtfully reimagined into two distinct zones, each offering its own unique allure—presenting two contrasting yet complementary culinary journeys. Whether marking a special evening or elevating an everyday moment, Viridis embraces each guest's occasion and mood, offering a more liberated, enriching dining experience imbued with understated luxury.
